Butternut Squash Soup

This rich and creamy soup is always a hit in our home. It has been requested by my kids for their birthday dinners so I know it’s a keeper!

Ingredients

large butternut squash
3
large carrots
1
diced onion

cups
chicken broth
⅛
tsp
thyme
¼
tsp
garlic

tsp
salt

tbsp
butter
½
cup
cream
Instructions
In a saucepan add butter, thyme, garlic, and onions and saute for a few minutes.
Add chicken broth, squash (1 inch cubes), and carrots (peeled and chopped), and simmer for 30 minutes.
Add salt and cream and puree soup in a blender. Serve immediately and enjoy!
