Butternut Squash Soup

This rich and creamy butternut squash soup is always a hit in our home! This soup has been requested by my kids for their birthday dinners so I know it’s a keeper. I usually double the recipe so we have leftovers the next day! I have experimented with a variety of recipes, and have modified what I add to the soup pot several times. The recipe here is now the perfect recipe that I turn to over and over. Follow the recipe below and serve up some delicious homemade soup for your next meal.

Butternut squash soup is made using carrots, onions, chicken broth, seasonings, butternut squash, and little butter and cream. After cooking, it is blended into a beautiful golden soup!

How to Choose a Butternut Squash

If the squash is not ripe, it will be tasteless. Start by selecting a butternut squash that is a dark beige colour without any green on it. It’s not ripe if it has a shiny look to it – it should have a matte look. Make sure the squash doesn’t have any cuts or bruises on it and give it a tap and listen for it to sound hollow inside. Choose a squash with a dark brown stem and select one that feels heavy for its size.

This soup is easy to prepare… the most difficult part is peeling the butternut squash. I am always extra cautious with this part as one slip could cause serious injury to your fingers.

How to Safely Cut Butternut Squash

The skin on a butternut squash can be difficult to peel as the outer layer is very tough! The process of peeling becomes easier if you put your squash in the microwave for two minutes first. You can then either use a vegetable peeler or just a sharp knife to slice off the outer layer.

How to Blend the Soup

Follow the recipe below. After cooking the vegetables, puree the soup using a blender. I use the Ninja blender and it works fabulously for this soup!

Cook Time 30 minutes

Ingredients
  

  • 1 large butternut squash
  • 3 large carrots
  • 1 diced onion
  • 3 cups chicken broth
  • tsp thyme
  • ¼ tsp garlic
  • ½ tsp salt
  • 2 tbsp butter
  • ½ cup cream

Instructions
 

  • In a saucepan add butter, thyme, garlic, and onions and saute for a few minutes.
  • Add chicken broth, squash (1 inch cubes), and carrots (peeled and chopped), and simmer for 30 minutes.
  • Add salt and cream and puree soup in a blender. Serve immediately and enjoy!

Butternut Squash Soup is wonderful when served with homemade bread.
